Meg's Spinach and Chicken Dish

This is a delicous dish that is both easy and quick to prepare. The combinations of flavors and textures will make you go up for seconds! Enjoy with garlic bread and pair with a glass of white wine. A great dish for the health conscious!

Ingredients:

Preparation:

  1. Mix all ingredients together.
  2. Chop up an onion, cut it up and sauté until translucent.
  3. In the process, tear up spinach in pan with olive oil and salt and pepper.
  4. Cut up chicken into little pieces and cook with onions and spinach.
  5. Cut sun dried tomatoes into strips and add to pan.
  6. Cook until chicken is done(sprinkle a little cheese on while you do this.)
  7. Boil pasta until al-dente, strain and cover with pesto.
  8. Spoon tomatoes, spinach, and chicken on pasta and enjoy!
