You can call me the cookie monster because I love cookies. Peanut butter cookies are by far my favorite kind. Ever since I learned how to make cookies, I've made a batch to satisfy my peanut butter craving.

Ingredients:

Preparation:

  1. Mix the shortening, peanut butter and sugars. Add eggs, beat them well after their addition. Add vanilla.
  2. Add the flour, baking soda and salt, then add to creamed mixture and mix well.
  3. Make small balls and place 2 inches apart on ungreased baking pan. Flatten with a fork.
  4. Bake at 375 degrees for 7-8 minutes, or until golden. Remove to wire racks to cool
  5. Mix filling ina new bowl, beat the peanut butter, powdered sugar, vanilla and enough milk to achieve spreading consistency.
  6. Spread on half of the cookies and top each with another cookie. Enjoy.

Makes 2 dozen sandwich cookies
